This is a great tasting dressing (or dip) that is easy and healthful. It can be used on a salad with lots of vegetables and white beans or as as a healthier sauce for meat – we currently use it for a mediterranean burger on whole wheat pita.  We recommend finding a local feta at the market – we like Clover Creek from Boalsburg market.   Feta cheese can be strong and pungent or mild – pick the one you like best.

16 oz.              Fat Free Plain Yogurt
3 oz.                Rice Wine Vinegar
4 oz.                Feta Cheese
2 oz.                Olive Oil
2 Tbsp.             Sugar (or equivalent sweetner)
1  tsp.              Fresh Dill
To taste           Salt and Pepper

Using an immersion mixer or your kitchen blender:

  • In a mixing bowl combine the yogurt and rice wine vinegar.
  • Add the feta, salt & pepper and sugar.  Mix until smooth.
  • Add the olive oil in a constant stream until the dressing has thickened.
  • Finally, add the dill to the dressing and whisk thoroughly.
  • Adjust to taste with more salt & pepper as desired.
