Sweet potato fries are a great complex carbohydrate source that can pair perfectly with almost every meal! They are simple to make and taste great. When preparing the fries, use the recommended serving size of olive oil to get your serving of healthy fats.

Makes 4 servings

Ingredients:

2 medium sweet potatoes

2 tablespoons olive oil

¼ tsp sea salt

¼ tsp black pepper

¼ teaspoon parsley

Directions:

  1. Preheat oven to 400°F.
  2. Rinse sweet potatoes and cut into ½ inch thick fries (about the size of a steak fry).
  3. Line a sheet pan with foil and layer fries into foil.
  4. Drizzle 2 tablespoons of olive oil over the fries. Add seasonings.
  5. Place in oven on 400°F for 30-40 minutes or until fries are crispy around the edges.
  6. Serve on the side with a lean protein and vegetables.
